Yoshino cedar

Yoshino, Nara Prefecture, has long been an active forestry area. This area has a history of more than 500 years of afforestation, and forestry is firmly rooted in the area. In particular, the area has developed as a producer of components for “Tarumaru”,barrels and vats used for Japanese sake brewing.
The characteristics of Yoshino cedar, such as its resistance to leaks, aroma, and color, are very well suited to sake brewing.
Today’s disposable chopsticks are an eco-friendly product that was invented 130 years ago by the Japanese to make effective use of the scraps of Yoshino cedar that were used for “Tarumaru”.

I want to emphasize that Yoshino’s disposable chopsticks are not disposable, but can be used for a long time.

Green tea

a Medical University in Nara announced that commercial tea has been found to render Covid 19 virus harmless. At the basic research stage, the effect in humans has not yet been confirmed, but in vitro, up to 99% of the virus loses its infectious power after one minute of contact with the tea, which is one of the most promising measures against infection.

The effectiveness varies from product to product. About 10 products were used in the experiment, including bottled green tea and black tea. The most effective product was black tea brewed from leaves, which reduced the infectious virus to 1/100th of a minute and less than 1/1000th of an infectious virus in 10 minutes. According to the professor, the effects of catechins have been confirmed in Influenza, and drinking tea is expected to have the same effect.

For tea manufacturers, rain is not welcome. After harvesting, tea enters the process of being steamed. Tea leaves with water droplets on them cannot be steamed evenly. Also, there is a musty smell, and the minerals and nutrients of the leaves get sucked out and so the flavor weakens. In the rainy season, the cells of tea leaves which grow vigorously get bigger, and the amount of polyphenol and minerals lessens and so the quality decreases. They anxiously await the rainy season.

This season, the peak season of late April to early May saw a lack of rain and low temperature, leading to suppressed growth of new sprouts. The new tea sales season on the 88th night of spring (May 1st) coincided with the declaration of state of emergency and shops were unable to have sales, stagnating the number of customers.   The transaction of first-grade tea in Shizuoka Prefecture has almost completed by June 1st. It is expected to fall below 10,000 tons mark for the first time, down by 15~20% compared to the previous year. The average unit price per kilogram also dropped by 4.0% to ¥1554, renewing the lowest ever price in history.   According to production statistics by the Ministry of Agriculture, Forestry and Fishery, the production of first-grade tea in Shizuoka Prefecture was 11,000 tons in 2019. In the first year of Reiwa 2019, the distribution of production of first-grade tea based on producer is Shizuoka, largest producer at 47%, Kagoshima at 35% and Kyoto at 6%.

Why has tea become a common gift to give in return for funeral offerings?
It is said that tea was brought over by monks from China in the Heian period. Back then it was used more as an all-purpose medicine than as something that was consumed for its taste. It was also custom to offer tea to Buddhist altars every day. After that, it is believed that tea spread to commoners and was established as an offering in Buddhist memorial services.

For this reason, tea is chosen in consideration of the recipient’s health and with the intention that they will remember the deceased when they drink it.
Just how tea trees were planted to mark the boundaries of plots of land long ago, it is said that the tea used as gifts in return for funeral offerings marks the boundary between this world and the next, signifying one’s acceptance in parting with the deceased.

In particular, it is known that the catechin compound, which is the component of green tea’s bitterness and astringency, serves various health functions. Among them are the antibacterial, sterilizing, and antiviral actions.
The influenza virus enters the nose and throat, where it propagates and causes symptoms. A small quantity of the catechin compound known as the epigallocatechin gallate (EGCg) powerfully suppresses the propagation of viruses. In other words, if you gargle with green tea, you can effectively block the growth of viruses in your nose and throat.

Also, even research findings indicate that green tea has inhibitory effects upon even infections from seasonal influenza viruses and novel and variant influenza viruses.

When you return home from being outdoors, make it a point to gargle with green tea and wash your hands.

The masu was not originally used as a Sake drinking cup but as a measuring cup. In Edo Period masu was used by merchants to measure for sale rice,grains, soy sauce, vinegar and sake. Nowadays masu are often used for serving sake at sake barrel ceremonies and at traditional Japanese pubs that appeal to the customer’s sense of nostalgia.

When you Visit Shrine in Japan ,You’ll encounter barrels with straw blankets.Those are sake barrels called kazaridaru. it means “display barrels” and not full of Sake.

brewery in Nara where Sake was born


the other day I had an opportunity to visit a Sake brewery in center of Nara, the next door neiborhood of Kyoto. their very fisrt Sake was just pressed when I visited and it was fortunate that I sipped the very fresh one as I was chatting with the brewery. It was very standard one in their Sake list but pretty easy to drink like premium Sake. Surprised. I felt that it was good one drunk during the meal.

the other day I visited to a brewery in Nikko,Tochigi. At present We are developing the possibility of Sake experience there because the Nikko has the Toshogu Shrine,one of the most popular tourist place in japan. the president and staffs welcomed me with open arms.

I realized that they kept making Sake in the old fashion way like
no cooling devices and squeezed Sake using funeshibori. Accordingly they treasure old Sake making tools. During staying at the brewery I was scanning exciting old stuffs. On the other hand the packages are simple but sophisticated.

Buddha Bar

We are developing a new BUDDHA BAR in the list of our Sake&Arts program and inspected the world’s largest bronze statue of the Buddha in Nara Prefecture. it is 14.98 m (49 ft 2 in) in hight and 500 tonnes in weights. Lately We are working with a nearby Sake brewery and trying to create the new BUDDHA BAR for foreign visitors.

I am here visiting our birthplace .This is Nakasendo Street in Fukaya,Saitama, with its old shops ,stalks, and unchanged lanes. Some years of our Sake&Arts activity were spent here. At these houses,ex Sake brewery site the activity was born as I was born in a Sake town in Kyoto.I can never look at that old old wooden without deep feeling.

We have been going to Enshu estate in Shizuoka,Mt. Fuji Area for sometime now.
it has one of two grandest tea industry area in japan and visiting tea comanies to learn the industry and meet
people there is main motivation.

a day with Mischa Leinkauf, artists from Berlin

we visited Matsumoto Sake brewing company established in 1791, Japanese restaurant Uosaburo established in 1764 and blacksmith’s shop Mizuno Tanrenjyo established in 1872 in a day. We learned a lot about japanese traditions in Fushimi ,Kyoto and Sakai ,Osaka.

we had a lot seafood-based cuisines, which are meant to symbolize Uosaburo in Kyomachi street. my birth place also in this street.
